Ingredients
1/3 cup all purpose flour
1/3 cup light brown sugar
2 Tbs pecan pieces
1/2 tsp cinnamon
3 Tbs cold unsalted butter, cubed
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 tsp salt
2 tsp cinnamon
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
2 large eggs, beaten
1/2 cup unsalted butter, melted
1 cup milk
2 tsp vanilla
1 large apple, peeled and chopped
Directions
  1. Preheat oven to 350° F. Spray a 9 x 5 loaf pan with nonstick spray. For the streusel, combine the flour, brown sugar, pecans and cinnamon in a small bowl. Add the cold butter. Use your fingers to squeeze and combine into a crumbly, wet sand-like consistency. Place in the refrigerator until ready to use.
  2. In a large bowl, whisk together the flour, baking powder, salt and cinnamon. In another bowl, stir together both sugars, eggs and melted butter until well-combined. Add the milk and vanilla. Stir until combined. Add this mixture to the flour mixture. Stir until just combined. Fold in the chopped apples.
  3. Pour the batter into prepared pan, smoothing the top. Sprinkle the streusel topping on the batter. Bake for 1 hour or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes. Run an offset spatula around the edges of the pan to release the bread. Carefully remove the loaf from the pan. Slice to serve.
