Ingredients
SALMON: 4 (6 oz) salmon fillets
2 Tbs vegetable oil
4 tsp barbecue seasoning
1/2 tsp salt
1/2 cup barbecue sauce
SALSA: 3 peaches, sliced
2 Tbs honey
1 Tbs vegetable oil
1 cup blueberries
1/2 cup red onion, diced
1 Tbs jalapeño, diced
2 Tbs fresh basil, chopped
2 Tbs lime juice
1/4 tsp salt
Directions

SALMON:

  1. Heat grill to medium heat. Place salmon on a baking sheet, and brush with oil. In a small bowl, combine barbecue seasoning and salt. Add a generous coating of seasoning to the top of each fillet. 
  2. Brush the grill grates with additional oil. Place salmon on the grill, top-side down. Grill for 2 to 3 minutes until lightly browned. Carefully turn salmon. Generously coat the top and sides of each fillet with barbecue sauce. Close the grill lid. Cook for 3 to 4 more minutes. Remove salmon from the grill. Serve with Grilled Peach-Blueberry Salsa.  

SALSA:

  1. Heat grill to medium-high heat. Toss peaches with honey and oil to coat. Grill peaches for 1 to 2 minutes on both sides. Remove from grill, and let cool. 
  2. Place blueberries in a plastic bag. Smash lightly with a mallet. In a bowl, combine peaches, blueberries and remaining salsa ingredients. Refrigerate until ready to serve.
