Ingredients
1 1/4 cups all purpose flour, spooned and leveled
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 stick (1/2 cup) unsalted butter, room temperature
2/3 cup Imperial® Sugar Extra Fine Granulated Sugar
2 large eggs, room temperature
1 1/2 cups mashed bananas (3 to 4 ripe bananas)
1/4 cup milk
1 tsp pure vanilla extract
1 cup mini chocolate chips, divided
1 to 2 bananas, sliced lengthwise into thirds (for optional topping)
Directions
  1. Preheat oven to 350° F. Prepare a 9 x 5 loaf pan with nonstick spray and Simply Done® Parchment Paper. Set aside.
  2. In a large bowl, whisk the flour, cocoa powder, baking soda and salt until combined. Set aside. Using an electric mixer fitted with the paddle attachment, beat the butter and sugar together on high speed until smooth and fluffy (about two minutes). With the mixer on medium speed, add the eggs one at a time. Beat well after each egg addition. Add the mashed bananas, milk and vanilla until combined. Use a spatula to fold in 3/4 cup of chocolate chips. Turn mixer to low. Slowly add the flour mixture until combined.
  3. Pour the batter into the pan. Spread it in an even layer. Sprinkle remaining chocolate chips on top of the batter. Add sliced bananas to the top, if desired. Bake for 1 hour to 1 hour 10 minutes, or until bread is fully baked when the internal temperature reaches 200° F to 205° F. Remove from the oven. Let cool in the pan for 30 minutes before serving.
