1 cup leftover cranberry sauce
1/2 cup chicken broth
2 Tbs Dijon mustard
1 Tbs apple cider vinegar
2 tsp honey
4 bone-in pork chops
3/4 tsp salt, divided
1/2 tsp black pepper
2 Tbs vegetable oil
1 medium onion, sliced
Directions
  1. In a bowl, stir together the cranberry sauce, broth, mustard, vinegar and honey. Sprinkle pork chops with 1/2 teaspoon of salt and pepper.
  2. In a large skillet over medium-high heat, add the oil. Sear the pork chops on one side for about 3 minutes or until slightly charred. Turn the chops, and add onions. Cook for 3 more minutes on the other side, and let onions become translucent and soft. Pour in the sauce mixture, and bring to a simmer. Reduce heat to low; cover. Let simmer for 20 minutes (depending on the thickness of the chops) or until they’re cooked to an internal temperature of 150° F. Serve chops with sauce spooned over the top.
