Easter Pastel Chocolate-Dipped Strawberries

Ingredients
32 medium strawberries
6 cups white chocolate chips
2 tsp vegetable oil
gel food coloring
assorted sprinkles, for decoration
Directions
  1. Line a rimmed baking sheet with parchment paper.
  2. Top with a cooling rack.
  3. Wash strawberries, and pat dry.
  4. Any water still clinging to them will make the chocolate seize. 
  5. Place chocolate in microwave-safe bowl.
  6. Microwave in 20-second intervals (stirring each time) until smooth and melted.
  7. To make the chocolate easier to handle, stir in a little vegetable oil once melted.
  8. Spoon chocolate into narrow glasses. Tint with food coloring.
  9. Dip the strawberries, and place on the rack.
  10. Decorate immediately, or wait until chocolate sets to drizzle with more chocolate.
  11. For drizzles, place melted chocolate in sealable plastic bags with a corner cut off.
  12. Drizzle onto strawberries as desired.
  13. Refrigerate strawberries until ready to serve.
