Fire-Cider Tonic

Ingredients
1/2 cup onions, large chunks
1/2 cup fresh horseradish root, peeled and chopped
1/4 cup fresh ginger root, peeled and chopped
fresh citrus, cut into wedges
8 cloves garlic, halved
1/2 jalapeño, sliced (or 1/2 tsp cayenne pepper)
2 to 3 cups apple cider vinegar
local honey, to taste
Directions
  1. FILL a quart-sized glass jar with onions, horseradish, ginger, citrus, garlic and jalapeños. Add other optional ingredients, as desired.
  2. POUR in the apple cider vinegar to the top of the jar.
  3. SEAL the jar. Store in a cool, dark place for 4 to 6 weeks.  
  4. SHAKE the jar occasionally, causing the beneficial properties of each ingredient to infuse together. 
  5. STRAIN the vinegar when ready to use, and discard all of the solid ingredients.
  6. ADD the honey to the strained vinegar, and stir until dissolved. 
  7. STORE in a sealed glass bottle in the refrigerator for up to one year.    
  8. USE as needed, and stay healthy!

Garlic: antiviral, antimicrobial; eases colds and other respiratory infections

Horseradish: clears sinuses and upper respiratory tract

Jalapeño: supports circulation and immunity

  • Herbs: thyme and/or rosemary
  • Citrus: peel or wedges
  • Spices: star anise, cloves, cinnamon
  • Turmeric: root or powder form

How to Drink:
IN SELTZER WATER OR FRUIT JUICE Mix about an ounce of cider with 8 ounces seltzer water, a drizzle of honey, lemon juice and a sprig of rosemary. You can also add a tablespoon of cider to fresh juice, which is especially helpful for sick kids.
AS A “WELLNESS SHOT” Drink 1 to 2 tablespoons daily during allergy season or whenever you feel a cold starting.
AS A SALAD DRESSING OR MARINADE Mix a tablespoon with some olive oil. Drizzle over leafy greens, vegetables or meat. IN A TEA Mix with hot water and honey to make a tonic tea.
IN A COCKTAIL Try a couple of dashes in a cocktail, such as a Bloody Mary.
