Ingredients
1 loaf Brookshire’s Bakery French Bread (approx. 8 cups, cubed)
1 stick butter
2 Tbs brown sugar
1/8 tsp cinnamon
1 kiwi, peeled and quartered
8 strawberries, halved
1 peach, sliced into 8 wedges
1 cup pineapple chunks
1 Tbs sugar
1 Tbs vegetable oil
wooden skewers
2 Tbs honey
1 Tbs lemon juice
1/2 cup blueberries
Goldenbrook Ice Cream, for serving
Directions
  1. Preheat oven to 400° F. Cut the bread into 1-inch cubes. Add to a large bowl. Melt the butter with brown sugar and cinnamon. Stir to combine. Pour over the bread cubes, and toss to coat. Spread in an even layer on a baking sheet. Cook for 20 minutes, stirring the cubes halfway through cooking time. Remove from oven. Set aside. 
  2. In a large bowl, combine the kiwi, strawberries, peaches and pineapple with the sugar and 1 tablespoon vegetable oil. Toss to coat. Clean the grill grates. Brush the grates with vegetable oil. Skewer the fruit for grilling. Grill the fruit for 1 to 2 minutes until it begins to caramelize. Remove from the grill.
  3. In a small bowl, stir together the honey and lemon juice. Add the bread cubes to a serving bowl. Drizzle with honey and lemon. Toss to coat. Remove the fruit from skewers. Scatter the grilled fruit and blueberries over the top. To serve, add a scoop of ice cream to individual bowls. Top with the fruit panzanella.
