Ingredients
4 large jalapeños, halved and seeded
2 Tbs vegetable oil
1 cup sharp cheddar cheese, grated
1 cup Monterey Jack cheese, grated
1/3 cup mayonnaise
2 Tbs whipped cream cheese, room temperature
1 Tbs pimiento pieces, finely chopped
2 tsp fresh parsley
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper
Directions
  1. Rub the jalapeños with oil (inside the cavity and on the skin).
  2. Place on a baking sheet.
  3. In a large bowl, add the remaining ingredients.
  4. Stir to combine.
  5. Spoon pimiento cheese into each pepper.
  6. Heat grill to medium.
  7. Place jalapeños on the grill.
  8. Cook for 10 minutes or until filling is melted and grill marks appear on the jalapeños.
