Ingredients
3 cups rice, cooked
1 1/2 cups Brookshire’s Queso Easy, cut into 1/2-inch cubes
3/4 cup Herdez Roasted Salsa Roja
fresh cilantro, for garnish
Directions
  1. Place large piece of foil on work surface. Spray with nonstick cooking spray. Add rice to center of foil. Scatter cheese cubes over rice. Pour salsa on top. 
  2. Lift the top and bottom of foil. Fold down over ingredients, leaving room for heat circulation. Fold up the sides to create a packet. Place on a grill over medium heat. Cook for 20 minutes. 
  3. To serve, carefully open packet, and empty into large bowl. Stir to combine. Sprinkle with cilantro.
