Ingredients
3 cups leftover turkey
2 cups leftover side dishes (mashed potatoes, sweet potatoes, green beans, corn, etc.)
1 cup stuffing
2 cups breadcrumbs
3 eggs
2 Tbs cooking oil
Directions
  1. Add turkey to bowl of food processor; pulse a few times. (Meat should be slightly shredded but not over-chopped.) Remove to a large bowl. Working in separate batches, add any side dishes that need to be chopped to food processor, and pulse a few times to roughly chop. 
  2. Add the chopped sides to the turkey. Stir in any leftover mashed potatoes, the stuffing, breadcrumbs and eggs. Fold together. Form into small cakes about 3 inches wide and 2 inches tall. 
  3. Heat a skillet over medium heat. Add 2 tablespoons oil. Brown croquettes on both sides for about 3 minutes per side. Transfer to a 325° F oven for 15 minutes to heat through. Serve with leftover cranberry sauce or turkey gravy.
